Esta receta viene de la familia de mi abuela materna, de origen italiano como mucha gente de Torrevieja (Alicante).
This
recipe comes from my maternal grandmother’s family, of Italian origin as many people
in Torrevieja (Alicante).
Ingredientes (para 4 personas):
5 huevos
1 berenjena
1 tomate
ajo, perejil, queso, pan rallado, orégano, sal y pimienta blanca
Ingredients (for 4 persons):
5 eggs
1 aubergine
1 tomato
garlic, parsley, cheese, breadcrumbs, oregano, salt and white pepper
1. Hervimos la berenjena troceada hasta que esté blanda y la ponemos a escurrir.
2. Batimos los huevos y añadimos todos los ingredientes. El tomate se puede poner troceado o triturado.
3. Ponemos la mezcla en un molde y horneamos media hora a 180º.
1. Boil the chopped aubergine until it is soft and drain.
2. Beat the eggs and add all the ingredients. The tomato can be chopped
or pureed.
3. Put the mix in a bowl
and bake at 180 º for about 30 minutes.
Se sirve fría.
Serve
cool.
Dos variaciones: en lugar de berenjena se puede hacer con espinaca o con alchachofa, guisantes, cebolla picada y hojas blancas de lechuga.
Two
variations: instead of aubergine it is possible to prepare it with spinach or with
artichoke, peas, chopped onion and lettuce white leaves.
